Tonight on the menu: Crock pot veggie minestrone. this might be one of my absolute favorite and very healthy crockpot dishes I have made. This
was the first time I have made this and I must say it was quite tasty and pretty simple. That this dish would align well with many wanting to eat healthier in the new year.
Here’s what you’ll need:
Pasta (I used elbows)
College Inn Broth
Marinara sauce
Carrots
Cellary
Spinach
Peppers
Onion
Salt
Pepper
Spicy Old Bay Seasoning
One baguette
Shredded Cheese
Prep:
I started with a little olive oil at the base of the crockpot salt and pepper and added a can of college in broth. Next I added in 1 1/2 cups of red marinara. Chopped up all veggies and added to the crock. I let simmer for three hours and half hour before serving added elbow pasta. Serve with sprinkled shredded cheese on top and a baguette for dipping on the side.
